UMEBOSHI PLUMS

Umeboshi plums are fermented plums, rich in probiotics. For over a thousand years they have been valued as a powerful digestive aid. Asian cultures use this fruit to rejuvenate the gut, as an anti-bacterial, anti-candida, and anti-parasitic. It also aids the liver.   

How are fermented Umeboshi plums made?

The little plums are fermented with sea salt and shiso leaves, sometimes for many years.  The result is an incredibly alkaline, probiotic rich, pickled fruit with a host of health benefits.  The shiso leaves have many medicinal health benefits themselves, and they contribute to the antimicrobial and infection-fighting components of the umeboshi plums.

Unfortunately, many companies use artificial dyes and preservatives to keep costs down.

How to Consume Umeboshi

Umeboshi is a very tasty condiment. The salty and sour properties of umeboshi plums make them an excellent accompaniment to any dish.  Just remove the pit and cut up the fruit into little pieces, adding them to salads, on bread or in any rice dish. 

They can also be used to just add a nice flavor when preparing any grains or vegetables.  Eating one on its own first thing in the morning with breakfast stimulates digestion for the day.

Instructions: Remove the pit and cut up the fruit into little pieces, adding them to salads, on bread or in any rice dish.  Consume up to 4 plums per day.

 

RAW SAUERKRAUT

Our Homemade Sauerkraut is a healthy Probiotic powerhouse, which aids digestion and nutrient absorption and restores healthy gut bacteria. 

Most store bought sauerkraut is heated & pasteurized to make it shelf-stable. However, the pasteurization process destroys the active & live enzymes and bacterial cultures that are beneficial for the digestive process and immune system.  Even many "raw" sauerkrauts are made using whey starters to save time.  

At Joseph's Organic Bakery , we never heat or pasteurize the final product.  We use the ancient traditional method of making sauerkraut, just sea salt, cabbage, carrots, bay leaf and peppercorn fermented to ensure a product that is rich in beneficial enzymes, probiotics, and vitamin C.  We make our sauerkraut by hand in small batches.

If it’s on a shelf or in a can -don't buy it- the probiotics & enzymes in the sauerkraut are dead! At Joseph's Organic Bakery, Our sauerkraut contain live good bacterial cultures. Keep refrigerated for 2 months. Once opened consume within 2 weeks.

Ingredients: organic cabbage, carrots, bay leaf, black peppercorns, and alkaline bamboo salt

Instructions: Refrigerate upon receiving. Can last in the fridge unopened for 2 months. Consume within 2 weeks after opening.

ANCIENT GRAIN SOURDOUGH BREADS

Our ancient grain Sourdough breads are fermented for 8 - 48 hours to ensure probiotic proliferation. Made with ancient grain Kamut or Einkorn, these breads are 100% wholegrain, we never add white or refined flour. In fact, we grind the grains ourselves to ensure there is nothing added to the flour. 

We take pride in our unique preparation method, which enhances the vitamin and mineral content of each loaf, while preserving the essence and nourishing properties of our ancient grain flours.  

Our preparation method ensures that every loaf we bake contains optimal nutrients, enzymes, and fiber. Our fermentation process supports probiotic growth, contributing to gut repair.
